Slow Cooker Corned Beef and Cabbage

  • 1 corned beef brisket 3-4 pound, with spice packet
  • 1 large onion quartered
  • 4 carrots peeled and cut into 2-inch pieces
  • 4 potatoes peeled and quartered
  • 1 head cabbage cored and cut into wedges
  • 4 cups beef broth or water

Method
 

  1. Place onion, carrots, and potatoes in the bottom of a slow cooker.
  2. Rinse the corned beef brisket and place it on top of the vegetables. Sprinkle with the spice packet.
  3. Pour beef broth (or water) over the corned beef and vegetables. Add more if needed.
  4. Cover and cook on low for 7-8 hours, or on high for 3-4 hours, or until the corned beef is tender.
  5. Add the cabbage wedges to the slow cooker during the last 2 hours of cooking time.
  6. Remove the corned beef and let it rest for 10-15 minutes before slicing against the grain.
  7. Serve the corned beef with the cooked vegetables and cabbage.

Notes

For a richer flavor, use beef broth instead of water. Adjust cooking time based on your slow cooker's performance.
