Method
- Place onion, carrots, and potatoes in the bottom of a slow cooker.
- Rinse the corned beef brisket and place it on top of the vegetables. Sprinkle with the spice packet.
- Pour beef broth (or water) over the corned beef and vegetables. Add more if needed.
- Cover and cook on low for 7-8 hours, or on high for 3-4 hours, or until the corned beef is tender.
- Add the cabbage wedges to the slow cooker during the last 2 hours of cooking time.
- Remove the corned beef and let it rest for 10-15 minutes before slicing against the grain.
- Serve the corned beef with the cooked vegetables and cabbage.
Notes
For a richer flavor, use beef broth instead of water. Adjust cooking time based on your slow cooker's performance.
