  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon caraway seeds
  • 1/4 teaspoon smoked paprika
  • 6 cups beef broth
  • 1 cup sauerkraut, rinsed and drained
  • 1 pound corned beef, chopped
  • 1 cup Swiss cheese, shredded
  • 1/4 cup Thousand Island dressing, plus more for garnish (optional)
  • to taste Salt and pepper
  • Rye bread croutons for garnish (optional)

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, caraway seeds, and smoked paprika and cook for 1 minute more.
  3. Pour in beef broth and bring to a simmer.
  4. Add sauerkraut and corned beef. Simmer for 15 minutes to allow flavors to meld.
  5. Stir in Swiss cheese until melted.
  6. Stir in Thousand Island dressing.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with additional Thousand Island dressing and rye bread croutons, if desired.

Notes

For a richer flavor, use homemade beef broth. You can also add a splash of beer to the soup while it simmers.
