Method
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic, caraway seeds, and smoked paprika and cook for 1 minute more.
- Pour in beef broth and bring to a simmer.
- Add sauerkraut and corned beef. Simmer for 15 minutes to allow flavors to meld.
- Stir in Swiss cheese until melted.
- Stir in Thousand Island dressing.
- Season with salt and pepper to taste.
- Serve hot, garnished with additional Thousand Island dressing and rye bread croutons, if desired.
Notes
For a richer flavor, use homemade beef broth. You can also add a splash of beer to the soup while it simmers.
