Method
- Preheat oven to 400°F (200°C).
- Scrub potatoes and pierce with a fork.
- Rub potatoes with olive oil, salt, and pepper.
- Bake for 45-60 minutes, or until soft.
- Let potatoes cool, then cut in half.
- Scoop out flesh, leaving 1/4 inch border. Reserve scooped potato.
- Place potato skins on a baking sheet.
- Sprinkle cheese and turkey bacon into the skins.
- Bake for 5-10 minutes, or until cheese is melted.
- Top with sour cream and green onions before serving.
Notes
For extra crispy skins, broil for the last minute, watching carefully to prevent burning.
