Potato Skins

Crispy potato skins loaded with cheese and bacon are the perfect appetizer or snack. Top with sour cream and green onions for a flavorful treat!

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup crumbled cooked turkey bacon
  • 0.25 cup sour cream
  • 2 tablespoons chopped green onions

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until soft.
  5. Let potatoes cool, then cut in half.
  6. Scoop out flesh, leaving 1/4 inch border. Reserve scooped potato.
  7. Place potato skins on a baking sheet.
  8. Sprinkle cheese and turkey bacon into the skins.
  9. Bake for 5-10 minutes, or until cheese is melted.
  10. Top with sour cream and green onions before serving.

Notes

For extra crispy skins, broil for the last minute, watching carefully to prevent burning.
