Mahi Reuben Sandwich Recipe

A delicious twist on the classic Reuben sandwich, featuring flaky mahi-mahi instead of corned beef. This recipe is easy to make and perfect for a quick and satisfying meal.

Ingredients
  

Mahi
  • 2-4 Mahi fillets depending on how many you are cooking for
Coating
  • 1 cup crushed corn flakes
  • 1 cup pancake mix we used Bisquick Complete
  • 2 eggs
  • 1 tablespoon coconut oil or EVOO
Cole Slaw
  • 1 bag cole slaw
  • 0.25 cup sugar
  • 0.25 cup Extra Virgin Olive Oil
  • 0.25 cup red grape juice vinegar
  • 0.25 cup mayo I use low-fat or fat free
Other
  • Thousand island Dressing
  • Slices of Swiss Cheese
  • Buns

Method
 

  1. Mix cole slaw, sugar, red grape juice vinegar, EVOO, and mayo together.
  2. Cover and refrigerate until ready for use.
  3. Beat eggs in a shallow bowl and set aside.
  4. Mix corn flakes and pancake mix in a separate bowl.
  5. Coat Mahi in the egg – make sure you coat both sides.
  6. Coat Mahi in the corn flake mixture – make sure to coat both sides.
  7. Heat the oil in pan.
  8. Place Mahi in pan, cook approx. 5 mins per side until flaky.
  9. Place the cooked Mahi on your sandwich roll/bun.
  10. Top with Swiss Cheese, Cole Slaw and Thousand Island Dressing to taste.

Notes

Adjust the amount of Thousand Island dressing and cole slaw to your liking for the perfect balance of flavors.
