Method
- Mix cole slaw, sugar, red grape juice vinegar, EVOO, and mayo together.
- Cover and refrigerate until ready for use.
- Beat eggs in a shallow bowl and set aside.
- Mix corn flakes and pancake mix in a separate bowl.
- Coat Mahi in the egg – make sure you coat both sides.
- Coat Mahi in the corn flake mixture – make sure to coat both sides.
- Heat the oil in pan.
- Place Mahi in pan, cook approx. 5 mins per side until flaky.
- Place the cooked Mahi on your sandwich roll/bun.
- Top with Swiss Cheese, Cole Slaw and Thousand Island Dressing to taste.
Notes
Adjust the amount of Thousand Island dressing and cole slaw to your liking for the perfect balance of flavors.
