  • 1 pound lobster meat, cooked and chopped
  • 1 pound linguine pasta
  • 1/2 cup heavy cream
  • 1/4 cup dry white grape juice (e.g., Sauvignon Blanc)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • to taste Salt and freshly ground black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Method
 

  1. Cook pasta until al dente, reserve 1 cup pasta water.
  2. Melt butter, sauté garlic and red pepper flakes for 1 minute.
  3. Pour in white grape juice, simmer for 2-3 minutes.
  4. Add cream and Parmesan, stir until smooth. Season with salt and pepper.
  5. Fold in lobster, heat through for 2 minutes.
  6. Add pasta to sauce, toss. Add pasta water if needed.
  7. Serve garnished with parsley.

Notes

For an extra rich flavor, consider adding a splash of sherry or cognac to the sauce.
