Instant Pot Reuben Sandwiches

  • 1.5 lbs corned beef brisket, trimmed
  • 1 cup beef broth
  • 1 teaspoon caraway seeds
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 0.5 cup Thousand Island dressing
  • Butter or cooking spray

Method
 

  1. Place corned beef in Instant Pot.
  2. Pour broth over brisket, sprinkle with caraway seeds.
  3. Seal Instant Pot, cook on high pressure 75 minutes, 15-minute natural release, then manually release.
  4. Remove brisket, shred with forks.
  5. Butter outside of rye bread slices.
  6. Assemble sandwiches: cheese, sauerkraut, corned beef, dressing, cheese.
  7. Top with remaining bread, butter-side up.
  8. Cook in skillet/panini press until golden, or bake at 375°F (190°C) until golden.
  9. Slice and serve.

Notes

For extra flavor, toast the rye bread before assembling the sandwiches.
