Method
- Place corned beef in Instant Pot.
- Pour broth over brisket, sprinkle with caraway seeds.
- Seal Instant Pot, cook on high pressure 75 minutes, 15-minute natural release, then manually release.
- Remove brisket, shred with forks.
- Butter outside of rye bread slices.
- Assemble sandwiches: cheese, sauerkraut, corned beef, dressing, cheese.
- Top with remaining bread, butter-side up.
- Cook in skillet/panini press until golden, or bake at 375°F (190°C) until golden.
- Slice and serve.
Notes
For extra flavor, toast the rye bread before assembling the sandwiches.
