  • 1 can corned beef diced
  • 1 can condensed cream of mushroom soup
  • 1 can mixed vegetables drained
  • 1 package frozen tater tots
  • 1/2 cup shredded cheddar cheese optional

Method
 

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Combine corned beef, soup, and vegetables in a bowl.
  3. Pour mixture into a 9x13 inch baking dish.
  4. Arrange tater tots over the corned beef mixture.
  5. Bake for 30-40 minutes, until golden brown.
  6. Sprinkle with cheese during the last 5 minutes (optional).
  7. Let stand for a few minutes before serving.

Notes

For a crispier topping, broil the tater tots for the last few minutes of baking, watching carefully to prevent burning.
