Ingredients
  

Pasta Salad
  • 12 oz elbow macaroni or small shell pasta
  • 2 cups cooked lobster meat (tail or claw), chopped
  • 1 cup celery, finely chopped
  • 1/2 cup red onion, finely diced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup fresh parsley, chopped
  • 1 tbsp fresh dill, finely chopped optional
  • 1/2 cup frozen peas (thawed)
Dressing
  • Salt and pepper to taste
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp Dijon mustard
  • 1 tbsp white grape juice vinegar
  • 1 clove garlic, minced
  • Salt and freshly cracked black pepper to taste

Method
 

  1. Cook pasta until al dente, drain, rinse, and cool.
  2. Cook lobster and chop into bite-sized pieces.
  3. Whisk together mayonnaise, sour cream, lemon juice, mustard, vinegar, garlic, salt, and pepper.
  4. Combine pasta, lobster, celery, onion, bell pepper, peas, parsley, and dill. Pour dressing over salad and toss.
  5. Refrigerate for at least 1 hour before serving.

Notes

For an extra burst of flavor, try grilling the lobster before chopping it into the salad.
